Kimberly was a student research coordinator for Helfgott at the National University of Natural Medicine (NUNM) and she published peer-reviewed scientific articles alongside her students. It was here that she discovered that the best way to promote and to sustain health for people is through healthy eating habits and proactive lifestyles, which is dependent upon systems that support clean air, water, and food practices. This insight was impetus for a major career change. As a result, Kimberly worked on farms-- from orcharding to livestock to community garden plots-- and learned how to ethically and sustainably grow food and raise animals in extreme environments with limited resources. She finds this experience invaluable, as it taught her steadfast discipline and a greater understanding of what it genuinely takes to put food on the table for herself and for others. She owns a company called Fresh Tooth Foods where she continues to provide others with fresh and zesty local produce.
Plants have always fascinated Kimberly, and she is a steward of wildlands and an educator for plant care as a volunteer with the Colorado Master Gardener Program. She admires plants' adaptability; harmonic cohabitation and ecosystem restoration capacities; fortitude in extreme and unusual circumstances; and their collective ability to nourish and heal humans and animals. Kimberly definitely “geeks out” on plants and enjoys sharing and exchanging that knowledge with others.
Ample access to the wilderness provides great unabridged adventures for her and her dog, Johnny Jude Cash. They both thrive in unadulterated natural settings, and as a Wilderness Emergency Medical Technician (WEMT), she enjoys helping others feel comfortable in our natural environment in emergency and out-in-the-wild settings. As a self-proclaimed carrot chaser and to satisfy her inner nature, Kimberly doggedly trains so that she can admire the view atop mountains and volcanoes— especially in the wintertime when the alpine glow is ripe!
